Grilled Gyro Style Lamb Skewers

Ingredients
1 1/4 pounds ground lamb 1 tablespoon garlic, chopped
1 large whole eggs
2 tablespoons parsley, chopped
1/4 teaspoon cayenne pepper
1/2 teaspoon chili flakes
1/2 teaspoon paprika
1/4 cup milk
1/2 teaspoon salt
1 package pita bread
1 cup iceberg lettuce, thinly sliced
2 ripe tomatoes, diced

This is called a gyro because it's made from ground lamb. As a Greek specialty, it is usually served with cucumber-yogurt sauce called tzatziki.

1 Prepare grill.
Combine lamb, garlic, egg, parsley, cayenne, chili flakes, paprika, milk, and salt in bowl of food processor. Pulse until smooth and well blended, about 20 pulses.
2 Using the palm of your hand, shape 1/4 cup of lamb mixture into short oblong logs. Press skewer lengthwise into meat. (Shaping is much easier when your hands are wet. Keep a bowl of cool water nearby and wet your hands when meat feels sticky.) Squeeze meat mixture around skewers. (If meat falls off skewer as you shape it, use less meat.)
3 Grill skewers over medium-hot coals until golden all over, about 3-4 minutes per side.
4 Using the tip of a sharp knife, split pitas. Top pita with lettuce, tomato and a skewer. Hold pita around meat and remove skewer (twist and then pull skewer to easily remove).
