    So now, we're going to talk about how to make a latte. We're going to extract
    the coffee and steam the milk almost at the same time so that they're both
    ready at the end. We lock the portafilter into the group head at the top,
    we take our cup and straight away, without even any time, we press the
    extraction button.

    For me, it's the one with the two coffee cups symbol that indicates we're
    extracting a double espresso and we can leave that to extract. Then, we're
    going to steam our milk and for that, we need to steam one and our jug of
    fresh cold milk. We're going to purge the steam wand by opening it up and
    letting the water that's in the inside to come out.

    That makes sure that that water isn't going into our milk and we've got a nice
    fresh milk. We take the steam wand now down to the side and we put it to
    the tip. It's just underneath the surface, about a centimetre or so, and
    then we're going to open up our steam wand fully.

    And with this, the key is to always ensure that your steam wand tip remains
    under the surface. You don't want to be blasting too much air in for a
    latte; you don't want to be perfusing too much foam on the top. We then
    take our espresso that we've poured out into the mug and we're just going
    to polish our milk and by that, it means giving it just a couple of taps
    which gets rid of any large bubbles that are in there and then giving it a
    little spin, and we're going to take it all the way to the top.
